We went to our friend’s house for dinner the other night and had this fabulous Chicken Lime Curry dish, so of course, I had to get the recipe and make it  for dinner this week.  Everyone ate all of it,  but without much comment. I wasn’t sure if they liked it because I  know curry can be a pretty strong spice.  So after everyone was done, I asked the kids what they thought and Alice came back with “I loved it!!” and Tate said “Mmm. Uh hmm. Yeah, mom it was good.”  So enthusiastic, right?  But he really did like it because he ate every single bite!  Anyway, I loved it and it went really well with my butternut squash soup for lunch the next day.

By the way, a grater should not be used in place of a a zester.  Out of a whole lime, I only got about 1/10 of a tsp of lime zest!  Time to invest in a real zester…

Okay. here’s what you need for the chicken dish:

  • 1 1/2 lb chicken breast, cut into bite sized pieces
  • 1 1/2 lime, juice
  • 1/4 tsp lime zest
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp celtic sea salt
  • 1/4 tsp pepper
  • 1 1/2 tsp curry powder
  • 1/2 tsp coriander
  • 2 tsp cilantro, fresh or dried
  • 2 tbsp coconut palm sugar

Here’s what you need to do:

1.  Preheat oven to 350.

2.  Cut up chicken into bite sized pieces.

3.  Place chicken in a square glass dish and set aside.

4.  Combine above ingredients in a separate bowl, mix, and add to the chicken.

5.  Bake for 30 min, stirring around every 10 minutes or so.

Now and then, my Mum makes sotehming like this, but when she serves it, she gets this big pan and flips the pot on it to make it into a cool shape (You know, like what you do with custard soemtimes). Anyways We would have this game when we eat, and we would all put our own rice, but the first one to make the rice get out of it’s original shape has to clean the dishes that night lol. Hi all, I am so sorry in my delay in announcing the Naturalmond nut butter winner, but this weekend was really crazy.  One thing we did, actually I should say, my daughter did, was get this!

She did her first triathlon. I was so super proud of her!!

Anyway, I know, these pics have nothing to do with food or nutrition but not having any pictures for today’s post, I thought it was an excuse to brag. Right?? No, I know, not really.

By the way, I am looking for some new dinner ideas lately. I would LOVE to hear if you have a staple or favorite paleo meal!! So for tonight, instead of trying something new, we went with one of our favorites and it included the Coconut Fried Chicken Nuggests,  my new and improved super crunchy Sweet Potato Fries, and our staple for years now, the Cauliflower Mash.   I could eat this dinner 3 nights a week!!!  I think we all could!

I promise to post more fun stuff this week, but for now, I need to get back to work on pictures. It’s that time of year!!

Things seem so busy lately! Is it the new fall schedules, the school meetings, the sports activities, or the job? Or, were we just incredibly spoiled by a lazy summer and didn’t even realize it??  Anyway, regardless, time was short tonight, so I pulled out this jar of sauce I bought months ago.  I was a little skeptical since I don’t tend to use pre-made sauces, but as soon as I opened the jar and took a whiff, I knew this was going to be good.  And it was! So good that Tate literally jumped up from eating and ran over to give me a hug and say “Thanks mom! This is the best dinner ever!!”.  Hmm, “ever”? I’m so happy he liked it, but wish I could credit for this one.

Alright so I got this stuff from Whole Foods (also available online Vitacost, Amazon, or click here to do a search for location that sells it near you) for $4 and it was worth every penny.   They have about 4 other sauces but the others sounded spicy and my daughter and husband are what we called “spice wimps” in our family.   This Jalfrezi one says “Medium hot” but has zero “hot” spice to it.  Has anyone else tried the other flavors?

At first I thought, this has too many ingredients, but then I realized most of them are just spices and real ingredients.

I used 2 lbs of chicken and a jar and a half of Jalfrezi sauce.  All you need to do it cut up the chicken into bite sized pieces (or use a Whole Foods rotisserie chicken if in a real rush).  Then heat large pan on high and put about 1 tbsp coconut oil in the pan. Cook the chicken until it’s brown on both sides.

Then lower the stove to simmer, add sauce and about 2 handfuls of spinach, let cook for about 15 minutes, and enjoy! So easy!!

As for our side, as the saying goes, bacon makes anything yummy and this certainly enhanced our broccoli.  Just cut up the broccoli crowns,  3-4 slices of pork bacon (nitrate free) into small pieces, and 5 or so garlic cloves (Trader Joe’s pre-pealed of course) and put it all in a large bowl.  Then,  pour  2 tbsp of extra virgin olive oil, add celtic sea salt, and stir until well coated.   Lay out flat (as possible) on cookie sheet and roast on 400 for about 35 minutes, turning the broccoli every 10-15 minutes.

Most of the bacon was cooked but once I pulled out all of the broccoli, I put the remaining bacon back in the stove for about 5 more minutes. We like our bacon crispy!

I could have just eaten this for dinner!

Everyone was happy!

A few months ago a friend gave me some of this Natualmond almond butter and ever since, I have been sharing my new found treat with many friends.  I love this stuff. I mean really love this stuff! I like to think of myself of a nut butter connoisseur and this is the best one I have had so far. Apparently Naturalmond only uses the highest quality almonds and then they slow roast them, which clearly makes a huge difference in taste.

Second, their freshness is unbeatable.  When I got some the other day (Tuesday), the almond butter was made on Sunday, three days old. How’s that for fresh?? And, the owner, Jaime, whom I had the pleasure of meeting the other day, really cares that their product is the freshest. When I told her I wanted to get a case (you can get a discount for bulk orders!), she was worried we wouldn’t go through it fast enough and suggested we get 6 jars now and 6 later. But then I ensured her, we go through the stuff like water.

Tonight, Tate and I had to fill out a piece of paper with pictures of him on it, for his new class. When I said, what can we tell your class so they learn about you, he said “I like to jump off the high dive (of course — no surprise if yoiu know my son), and that lady’s almond butter, and bugs and”, and I won’t bore you with the rest.  It’s that good!

I gave some to my friend Whitney and she emailed me tonight asking me where to get it and saying “That was the most incredible jar (of almond butter) I have ever eaten! ” She’s so right.  I hope you don’t mind me sharing that W!

I also love that it’s in a glass jar versus some plastic, leaking chemicals into my family’s food.  Big bonus!

Jaime will also be selling almond flour soon. Now that I know I can get the freshest and best quality almonds but Naturalmond, and at $16 for 2 lbs, where say Bob’s Red Mill is anywhere from $9-$12 per 1 pound bag, it’s a no brainer!  She doesn’t have the flour on her web site just yet but you can order her almond butter here. She is also in about 60 local retailers, mainly in GA and the southeast.

I do see why people love “breakfast” foods so much.  I mean, waffles, pancakes, muffins, donuts…what’s not to love? Because of this, I can completely understand why Mocorrcan Mash or spinach salad (you get use to it and actually enjoy it, I promise!) doesn’t sound as appealing at 7:00am. So once in awhile, we still like enjoy some of the traditional breakfast treats.

This weekend we made one of my favorite muffins (next to the cinnamon bun muffins)! These blueberry muffins are not only fantastic and will make your taste buds super happy, but they are also nut-free so we are able to share them with our dear friends that have nut allergies.  It’s nice to have these type of treats since there are so many kids with allergies now a days, which is such a bummer. Anyone know what there are so many allergies now? I would love some insight on that.

Anyway, on to the blueberry muffins…

Here’s what you need:

  • 1/2 cup coconut flour
  • 1/2 teaspoon celtic sea salt
  • 1/2 teaspoon baking soda
  • 6 organic eggs
  • 1/2 cup coconut palm sugar
  • 1/3 cup organic coconut oil or grass fed butter
  • 2 tsp vanilla extract
  • 1 cup fresh blueberries
I doubled the batch (single batch makes about 8 muffins) so we could freeze some for later.  These keep well so it makes for an easy on-the-go breakfast.
 
Here’s what you need to do:
 
1.  Preheat oven to 350.
2.  Mix dry ingredients in small bowl.
3.  Mix wet ingredients in medium bowl.
4.  Combine all ingredients until smooth.
5.  Put liners in a muffin pan and fill up each cup about 2/3 way full
6.  Cook on 350 for 20-25 minutes.
7.  Allow to cool and enjoy!!
