So today is day 8 of my sugar detox and besides Valentine’s Day, this has by far been the hardest day. I think going out last night and having a couple of drinks did not help, at all. Why is it when you have some drinks, you crave bad stuff the next day?

Okay so back to my Vitamix and smoothies  — Best. Investment. Ever. I love this thing and cant believe how much we are actually using it, every single day! There was a bit of a learning curve and it took me a little while to figure out exactly what I wanted in a smoothie, what my kids liked and what my husband would like, but think I’ve figured it out and I’m SO excited!

When I got my Vitamix, my mission or goal to was find a smoothie that was as nutrient dense as possible that tasted pretty good and well, if it tasted great, then that was just a bonus. I don’t need a mixer to eat lots of yummy fruits. I have no problem getting those down and since fructose is still sugar, that is something I don’t really want to over do. But, I can always use more greens in my diet and if this machine is going to help me (and my family) do that, then I am so happy!

First, I debated about kale versus spinach for my base in the smoothie. Turns out, kale has more vitamin C, A, K (I need to look that one up) and calcium and spinach has more fiber, magnesium and iron. So, I decided to use both. Why not, right?  I do use the juice from a whole lime to take away any bitter taste from the spinach and kale.  Since I make this smoothies twice a day, I like to get a big bag of limes from Costco.

I start by blending my kale and spinach. I’ll just use some warm water to start blending and then will let the vitamix run on high for a minute or two.  I do this so the greens can actually heat up a little and my body will be able to absorb more iron.

I know, I know you gotta be thinking, he’s making a big mess. Just look at his shirt. But don’t worry, he’s on clean up duty as well…

I also wanted some more veggies too and was using celery and cucumber, but then thought, why exactly am I using these. I like to make educated decisions on what I eat whenever possible. And after a little research, I found out that celery and cucumber are pretty light in the nutritional arena so decided to go with a few carrots instead for their beta carotenes and vitamin A and a little bit of sweetness.

Next I needed to add something else to make this a little sweeter. Since Costco’s Wild Organic Blueberries have a super high amount of antioxidents.

Now pre-sugar detox, I was also adding in half a banana and 3-4 drops of stevia. And as far as taste AND nutrition, in my mind, this was a perfect concoction.  Tate even loved it!!  But since I was doing the detox and wanted to stay away from high sugar fruit (and stevia) since it can cause cravings, I left these two things out. At first I didn’t love it, but now I look truly forward to it, twice a day!  Talk about changing your taste buds!!

Here is what you need:

 

  • kale, 1-2 handfuls
  • spinach, 1-2 handfuls
  • water
  • almond milk, about 1/3 cup
  • blueberries, 2/3 cup
  • chia seeds, 1 tbsp
  • raw cacao powder, 1 tbsp
  • banana, 1/2 (optional)
  • stevia, 2-4 drops (optional)
  • Lime, whole, juiced
  • Handful of ice
I love this thing!!

 

By the way, I’ve started experimenting with green powders like Green Vibrance (thanks Gracie for all the great smoothie ideas including this one!). I had also heard about Healthforce Vitamineral Green and am curious, do you use these? Do you like them and/or notice a difference in how you feel?

As for the rest of the family, this is Alice’s favorite is called Chocolate Covered Strawberries (or rasberries). Here is what you need:

  • spinach and/or kale
  • coconut water
  • coconut or almond milk
  • Strawberries (or rasberries)
  • Stevia, few drops
  • Dark chocolate chips

Here is Tate and Scott’s breakfast smoothie:

  • spinach and/or kale
  • blueberries
  • coconut milk (TJ’s can)
  • almond butter
  • ripe banana
  • 1 tbsp dark chocolate chips
  • 2-3 drops stevia IF banana isn’t really ripe

By the way, I went to costco yesterday because I need to restock on some smoothie ingredients and was so excited to find so many other great things…

By the way, this sausage is amazing in the cauliflower soup!

Like I mentioned in my last post, lately I’ve been having a little too much dark chocolate.  I think I’ve become an addict! Soooo, I decided it was time to go on a sugar detox. Ugh, it makes it so much more real when I announce it. Anyway, want do to it with me? Come on guys, speak up! There is something about social accountability.

Today is day 3 for me so that means I started on Saturday…the day of my son’s birthday party. Really?? Okay, not great timing.

Anyway, my little guy’s real birthday is today and he turned 5…

so I wanted to make a treat for him and his classmates. I decided to make some nut free, dairy free chocolate brownies (I mean, you’d think I was trying to torture myself!!) for his school since there are allergies and the school is nut-free.  I added a little magic shell to them and some sprinkles and the kids seemed to really like them!

They did turn out just a little dry (according to my husband since I did NOT try them) but other than that, they were pretty good. I cooked them 25 minutes. I think next time I’ll cook them for just 20. Regardless, Tate totally gobbled them up, as you can see. And I think Alice even liked them too and she doesn’t typically care for baked good, paleo or not. Oh, actually, she  just walked in the door from school and I asked her about the brownies yesterday and she said “YES! I LOOOOVED them”. She’s kind of like Mikey (from Life Cereal) when it comes to all things baked so this is a pretty good endorsement.

Because I’ve posted this recipe before, I thought it was only fair I actually posted a new one, since I’m getting paid the big bucks to do this. Yeah, right. But, we did have a fantastic meal last night and I wanted to share it.  

One of my good friends always has great cooking ideas and she was talking about how cooking meat and red wine (and not just drinking it) went so well together. So, I found a recipe online, made some tweaks, and this is what I came up with for our Sunday dinner.

For your Sunday Sirloin Stew, here is what you need:

  • 2 tbsp arrowroot
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 lb grass fed sirloin stew meat
  • 1-2 tbsp coconut oil
  • 3 bay leaves
  • 1 cup red wine (we used a Pinot)
  • 1 tbsp ghee
  • 1 cup chicken broth
  • 1  onion, chopped thin
  • 1 large container of raw mushrooms
  • carrots, couple of handfuls of sliced (I got the pre-sliced)
First, get out your stew meat and trim off excess fat, if needed. Whole Foods does a nice job with their stew meat so I didn’t have to do any work there.  Then, get out a freezer bag and put in the arrowroot powder, salt, paprika, and pepper and shake so it can mix well.  Now, put the stew meat in the bag and seal it tight. Shake this all together in order to make sure all of the meat if well coated with the mix.
 

Next, in your dutch oven or large cooking pot, add in the coconut oil and turn the heat up on high. Add in the meat and make sure it gets browned on all sides. While that is cooking, sauteed the mushrooms in another pan with some ghee.  You could also use butter or coconut oil here.

Then add in the mushrooms in with the meat, add the wine, broth, carrot and onions and allow it to come to a boil. Then, turn down on low and let it all cook, covered, for an hour to an hour an a half and enjoy! Easy, easy!

Lately, I’ve been eating a few too many dark chocolate almonds or Whole Foods dark chocolate chips or apples with magic shell…okay you get the point. And, it’s starting to catch up with me. Last night I had a fever for the first time in literally years. My husband was planning carpool schedules for the next morning, which he took to both schools (thanks Scott!).  But that night, I told him, pretty over confidently, that I would be completely fine in the morning. I drank lots of water all day with lemon and then my apple cider vinegar and baking soda concoction. I knew my immune system was lowered a little from the chocolate because one, that is what sugar does and two, chocolate is very acidic. Anyway, I woke up this am, had a slight headache, but went ahead with my workout and ended up feeling completely well, and now feel great. I wouldn’t have guessed that I would feel so well now after having full on chills/sweats the night before. YAY for getting alkaline again!! Watch…now that I’m bragging, I’m totally going to get sick!
 
Anyway, I had a bunch of grass fed ground sirloin around and wasn’t sure exactly what to do with it so came up with a sort of Asian Ground Beef Broccoli Slaw.  The kids really liked it and so did my hubby.
 
This is what you need:
 
  • 2 lb ground beef (I wanted to have leftovers, as always)
  • 1 bag of broccoli slaw
  • 1 onion (I used TJ’s onion, shallot, garlic pack as usual)
  • 3-4 garlic cloves (if you didn’t use the TJ’s pack)
  • 1 pack mushrooms
  • handful of spinach
  • 1 tbsp Coconut oil
  • 3-4 tbsp organic tamari gluten free soy or coconut aminos
  • 2 tbsp sherry (if you don’t use coconut aminos)
  • 1 tsp celtic salt
  • dash of pepper
 
This was super easy to make since I didn’t have to chop up any vegetables. I did use my ulu on the mushrooms while they were in the colander to slice up my pre-cut mushrooms just a bit more.
 
 
Cooking this is all about order and what takes the longest to cook. Start with a large cooking pan and add your coconut oil. Heat on high, then add in your mushrooms. After about 4-5 minutes, add in onions, then broccoli slaw. Mix together well while it’s cooking and then set aside after a few minutes. In another large pan cook your meat until brown. Now mix it all together in one of your pans, and add your spinach, salt, pepper, Tamari or coconut aminos, and sherry. Let cook for a few more minutes on low while the flavors soak then, and enjoy!
 
 
Clementines (or oranges) were really refreshing after this meal. We love our clementines this time of year!

I’ve been wanting to talk a little more about what I’ve been doing this past year with my nutritional consulting. It has been rewarding WAAAYYY beyond any expectations I may have had. I am truly passionate about it and have been so fortunate to have such amazing and dedicated clients this year. For those of you who still don’t totally understand what it is I do, my dear sweet client (and friend) wrote this to help give you an idea.

Here’s Ann’s story:

“Among our small family of five, we have two children with Cystic Fibrosis, a child with severe environmental allergies, a dad with Crohn’s and history of bowel obstruction and one very worn thin mom in the middle.  We were doing all we could medically but knew it was time to make some nutritional changes.  I had discovered Landria’s blog and “Stir It Up” she did!  I was completely overwhelmed at how to revamp the entire way we approached food, shopping, menu planning, baking, lunch packing, snacks.

First, she did amazing research on each of our health issue and asked very thoughtful questions about our current health status and nutrition plan.  She then came and met with me. This was our “clean out” meeting but it was much more of an educational conversation with great interaction and instruction.  It was, “not this, but this” or “use this, but sparingly” or “I can show you a much better version that your kids will love”. That session resulted in the clean out of our fridge, freezer and pantry.

Next, we went through Whole Foods and Trader Joe’s for some pointers on things to cook with, great snack and lunch ideas, and much more.  Again, it was a very educational experience.  We are now stocked with great foods for cooking, baking, snacks, and great easy meals.  Was this a huge transition?  Yes.  Where there nights my kids complained and didn’t understand why we were having yet another unrecognizable vegetable and no bread?  Yes.  Was it doable, sustainable, worth it?  YES!!!  I love how we eat now and having only great options in your home makes it so much easier to make great choices.

Landria was so helpful every step of the way with lots of emailing back and forth to weigh issues and suggest solutions.  You could not pay me to go back.  I have never had such control over what I want to eat and love that when you only put great fuel in, you only crave more great fuel!  We are fueled, thanks to Landria’s help.  We are all healthier, stronger and ready for the next fight with the next germ.  You may be thinking, “Well, they are sick.  I am not.  I don’t need to make these changes.”  There is no one who wouldn’t benefit greatly from these changes.  Give it a real try and I bet you will never remember feeling so good.  I still have a lot to learn, but am so very thankful for all that Landria has taught me and the way she has truly helped my family.  I will close with a quote fromWheat Belly, a must read for anyone considering this venture.  “See you in the produce asile.”

My husband sent me this New York Times article that is a fascinating must-read if you are still unsure of the link between food and our health!! It’s a great article regardless.

Now, I know not everyone is chronically sick and some don’t have any health issues.  But, don’t we all want to be less tired, feel less achy, have less headaches or have more energy? And don’t we want our kids to develop good lifelong eating habits, and be able to concentrate in school, and stay well with strong immune systems and just be the best little person they can be?

Of course each person/family has different needs, sensitivities, and goals.  That is why we’ll collaboratively figure out what is the most feasible and sustainable route for you and your family. This is a lifelong change and we can make it work!

I am soooooo happy. For years I’ve wanted a Vitamix and today I got one for my anniversary/Valentine’s Day! Woo-hoo!!! I’m just not sure where to start with this lovely machine.

So, late this afternoon, Tate and I ended up making 2 different types of smoothies and a spinach dip. It took most of the afternoon to figure out what to make and how to work the Vitamix, so guess what we had for dinner? Yep, 2 smoothies and spinach dip. Sometimes there is just not enough time in the day.

Anyway, I would LOVE to hear about your favorite smoothies, soups, etc. I have so much to learn! Please share with me!!

Why in the world do they still have the Super Bowl on a Sunday?  It would be so much easier, and certainly so much more fun, if they would change it to a Sat night, instead on a school/work night.  Oh well. It is what it is I guess.

Well, in order to get in the Super Bowl frame of mind (still bummed the Falcons won’t be there!) we thought we’d make a spinach dip.  I haven’t had spinach dip in years and thought this turned out well, especially without using MSG-filled Knorr’s Vegetable Dip, sour cream and Kraft mayo (that’s how I use to make it).  This recipe is paleo sans the dairy (so it’s “primal”) but if you don’t or can’t do dairy, just use nutritional yeast in it’s place.

Anyway, this was a pretty good dinner and I think it will be an even better Super Bowl appetizer…

Here is what you need:

  • 2 bags or 10 oz. box of frozen chopped spinach
  • 1/2 cup cashews 
  • 2 tbls EVOO 
  • 1/2 cup parmesan cheese (I ended up using TJ’s with raw cow’s milk and no rBGH) OR nutrtitional yeast
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp onion
  • 1/2 lemon, juiced
  • artichoke hearts (optional) 
I honestly forgot to use the artichoke hearts to my dip,  so if you use them, you might need to add a little extra spice salt, and onion & garlic powder. Just be sure to adjust according to taste.

Because I was playing with my Vitamix, but honestly, you could just mix it all together in a bowl. ..

 

Start by preheating your oven to 350. Then, thaw your spinach, if it’s frozen, and strain.  Then, blend up your cashews to make a cashew flour consistency. I usually keep a container of some in my refrigerator since I use the it so often on our kale chips.

Now, add all the ingredients together in a medium sized bowl, stir well and pour in a glass dish. Add some extra parmesan on top if you’d like, cook for 10 minutes, and enjoy warm!

    Raspberries/Dates/Kale and 3. Pineapple/Grapes/Banana/Avocado/
    Broccoli/Kale. I also like the Beet/Carrot/Apple/Lime/Ginger/
    Spinach but Melanie is not a fan so i only do that when its just me.ReplyCancel

  • Britton McLeod - Hi Landria, I LOVE my vitamix and now use it for everything it seems. It’s replaced my food processor! I don’t have any particular recipes to share. But I basically use it for all my prep work like chopping etc, make salad dressings,smoothies and shredding chicken. You will fall really get a lot of enjoyment out of this machine:)ReplyCancel

  • Mandira - Landria – this looks great! Any suggestions for an alternative to cashews? Rohan is allergic to nuts. Just leave them out or substitute something else?
