When the weather starts to cool, I really love to bake. Don’t warm baked goods just taste better this time of year? Anyway, y’all may have heard me talk about one of my favorite web sites, MultiplyDelicious.com, by Heather Connell. Through nutrition, she too has healed herself.  And through her blog, she shares many fabulous recipes; some of them are my very favorites that we still make regularly like the Curried Apple Chicken Salad.

Look how cute she is! I bet you are wondering about her bad a** arms, aren’t you? Yeah, she does Cross Fit…

Well, she has recently come out with a BEAUTIFUL paleo desserts book called Paleo Sweets & Treats that I am in love with, and it’s just in time for the Fall and holiday season!

Anyway, all of these recipes are just amazing, and the pictures that go with them will make you drool!! My daughter, who doesn’t really love baked good (paleo or not), has just dog-eared about 9 pages of this book with recipes for us to bake.

There are so many more recipes that I am drying to try, as well, but so far, the Spiced Apple Cakie Cookies are our favorite…

So I know they are called “cakies” and my look more like flat cookies. I’ve never been great with attention to detail or following directions; regardless, they were amazing. I know this will be yet another staple treat around our house. Anyway, you must check out her book!!! After a cold and wet day at my daughter’s school Fall fair, it’s hard to believe we were playing in the ocean just last weekend with 80 degree temperatures. Anyway, I thought while we were on vacation it would be a great time to work on our own holiday card pictures but man, is it hard!! Now I see why people pay me to do their family photos.

The good thing about my kids is that they are pretty easy to make laugh. You say “toot” and they are in tears from laughing so hard, which you would think makes it easy, but it can actually make it a little tough too.

I mean seriously, where are their eyes?

Okay, so here’s our attempt at a holiday card….

Well, I guess it could be worse.  Good thing for me it’s only October!!

So I’m sorry I’ve been so MIA but this is my crazy busy season, so finding time to post is not easy. But, this was a recipe I had to share ,and it’s perfect for a cold and rainy day like today.

So when I was growing up, my family and I would go to Piccadilly (yep, showing my red side), but I remember going there and getting their Salisbury steak, green beans, mashed potatoes and a piece of chocolate cake. Mmmm, it was so dang good. Dang!! I know…it just felt appropriate.

Anyway, I can’t say I’ve had Salisbury steak in quite some time. Honestly, probably not since my Piccadilly days 30 years ago (wow, 30 years ago??) but this recipe brought back memories for sure! The picture of the meal at the bottom does not do it justice at all, but it is REALLY good and I can’t wait to make it again!! And it goes really well with the cauliflower mash. Just like Piccadilly, but not.

Ingredients:

  • 1 lb grass fed ground beef
  • 1 organic egg
  • 1/2 cup almond meal or flour
  • 1 tsp pepper (1/2 tsp sauce, 1/2 tsp patties)
  • 1 tsp celtic sea salt
  • 1/2 tsp ground mustard
  • ½ tsp onion powder
  • 1 package mushrooms, chopped (I doubled this)
  • 1 small chopped onion (I used the TJ’s garlic, onion, shallot pack)
  • 2 cups beef broth
  • 1 tbsp coconut milk
  • 2 tsp arrowroot starch
  • 1 tbsp butter

Directions:

Preheat oven to 350. Then, start by chopping the onion and mushrooms. Next add butter to a hot pan and saute the veggies until soft.

Next, in a medium bowl, put meat, egg, 1/2 tsp pepper, almond flour, salt, mustard and onion powder and mash together and make flat patties about the size of your fist. Then, on a cookie sheet lined with foil, place the patties there and cook for 25 minutes.

While the meat is cooking, make your”gravy” by getting out a medium pot, and add your beef broth, arrowroot powder and the other 1/2 tsp pepper, your sauteed veggies, coconut milk and some salt to taste and cook on low for  10 minutes.

Once the meat is done cooking, it will NOT look pretty but don’t worry, it will taste amazing!!

Now, lay the patties out flat on a large deep pan or bowl, add the “gravy” and enjoy. Next time I will double this recipe for sure!! It makes for great leftovers!

“What’s better for us…more or less sleep?” was the question poised by the morning DJ’s as I drove carpool this morning. Well, duh.
 
Oh, but wait…they just said that 7-8 hours of sleep was better than 9 hours and that 9 hours of sleep may cause heart disease, diabetes and early death. What?!? The kids thought I was nuts talking back to the radio (really, you should have seen their faces), but honestly, how can they announce to everyone that less sleep is better? Don’t they look at facts like people with heart disease may have trouble sleeping. Or, that depression, which also can stem from illnesses like diabetes, can cause oversleeping. Sleep is one of the most important things we need and certainly not something we need to cut back on!!
 
It is studies like this that confuse us so much. Just like some of the other claims like omega-3s cause prostate cancer, higher cholesterol causes heart diseases and we need to eat low fat, and that we need dairy for strong bones. So my point? Always question what we hear. Look at some of the details like who’s funding the study, how long it went on, who they tested and what measures were used, and how old is the study. Just don’t just assume. You know what they say about assuming (I always did hate that saying)…
 
Okay, sorry for my little rant but it will be worth it to get to this truly fabulous meal! So this is one of those meals that I will make time and time again. I made this a week ago and now, looking at the pictures, well, I know they aren’t the prettiest pictures, but they are making my mouth water regardless. I was going to cook something different this weekend but I am pretty sure the ingredients for this are about to go on my grocery list. I love it, the kids loved it and my hubby loved it!!  Thanks Daphne for sharing such a great recipe!
 
Here is what you need:
 
  • 2 1/2 lb pork roast
  • coriander, salt, pepper (enough to cover the roast for a rub)
  • 3-4 shallots, chopped
  • 1 tbsp grass fed butter
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 3 tbsp stone ground mustard
  • 1/2 cup dried cherries or cherry preserves
  • 2 tbsp maple syrup

So start with trimming your pork. Then get your coriander, salt and pepper out so you can get a good rub on it.

Once you pat the rub on, turn your dutch over on high and sear both sides for a couple of minutes or until it gets nice and brown. If you don’t have a dutch oven, just sear it in another pan and then transfer to your slow cooker. Next, it’s time to get the sauce ready so chop up and saute your shallots with some butter. Once they start to become transparent, put them in a medium bowl.

Then add your chicken broth, white wine, mustard, cherries and maple syrup to the bowl, stir well, and pour on top of your seared pork.  I love these cherries by the way because they only use fruit juice to sweeten them. I bought these at Whole Foods but you can get them at Vitacost or Amazon. If you prefer, you could use 1/3 cup of cherry preserve in place of the maple syrup and dried cherries, but I felt like the dried cherries really made each bite so amazing!

Then cook in your oven on 200 for approximately 6 hours. Or if using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours.

 

The sauce is the best part so be sure to save that. We ended up eating it like a stew. Cut up the meat, add some sauce, and enjoy each and every bite!

When grandma use to say you needed a nice warm bowl of chicken soup to get well, I don’ t think she was talking about MSG, gluten, hydrogenated oil, GMO laden canned Chicken Noodle Soup.  I think what she was referring to was soup with immune-boosting bone broth, nourishing fresh herbs and spices, and some healthy chicken. For someone that is ill or recovering from surgery, I can’t think of a more perfect meal. Not only does it just taste soothing, but the broth is full of so many nutrients as I’ve said before (see old post here).

Anyway I’ve had some sick buddies lately, and they said this has been a great go-to meal for them. One friend who I made this for is an amazingly strong and brave woman. She has been doing everything in her power to prepare her body for some major surgery by taking probiotics, eating lots of greens and protein, and so much more. I have no doubt she will have an speedy recovery. Anyway, hopefully this soup will also help the mending process.

Oh, and not only is this soup incredibly healthy, but also it really does taste AMAZING. I am already planning on making some more for my family next week!

Here is what you need for THE BEST Chicken noodless soup:

  • whole chicken (or organic rotisserie)
  • bone broth (or organic chicken broth)
  • 1 pack broccoli slaw
  • handful of shredded carrots
  • 1-2 stalks of celery, if desired
  • 1 medium onion (I use TJ’s precut onion shallot garlic pack)
  • 4 fresh garlic cloves, minced
  • 2 bay leaf
  • 1/3 cup fresh parsley, chopped
  • 2 tsp celtic salt (or more, depending on preference and if you add more water)
  • 1 1/2 tsp pepper
  • 3/4 tsp thyme
  • 4-6 cups water
  • 1 tbsp Bragg’s apple cider vinegar
  • 2 tbsp grass fed butter or ghee

I love the easy to use pre-cut organic Broccoli Slaw from Trader Joes. Also I get most of my chicken from Costco now since they offer organic whole chickens and breasts…

I started by putting the whole chicken in the crock pot, and then added some salt and pepper as a rub to the chicken, and then let it cook on low for about 4-5 hours.

Once it was done, I took the meat off the bones, wrapped up the chicken and put it in the fridge for the next day.

Look at how much meat there is from one whole chicken? That’s more meat than I ever got from a rotisserie chicken!

I think George is sad he doesn’t get any…

For the bones, I left them in the cooker, added some water until it just about covers the bones, squished the bones down flat so it would all be immersed, and added 1 tbsp apple cider vinegar.  Then, I turned the slow cooker down to the “warm” setting, put the lid back on and let that cook over night. In the morning, I turned it off and let it sit for a few hours so it would be easier to transfer and I didn’t burn myself but you could do it immediately, I also just didn’t have the time.

I borrowed a friends strainer and it made this process so amazingly simple….

Now get out your big dutch oven or pot and melt some butter. Add your fresh minced garlic, the bag of  broccoli slaw, some extra shredded carrots, some chopped celery (I forgot to add it), and your chopped onion or your TJ’s onion mixture and let it cook until the veggies start to get soft. Next add in your broth, some water (start with 4 cups and add more as needed), your chicken and spices and allow it to cook on low for about 2o minutes so the flavors soak in well.

Yes it takes two days, IF you use the homemade bone broth, but it really is easy to do and soooo worth it. This is THE BEST chicken soup, if I do say so myself.

Tate actually said, “I thought it was going to be gross but, OH GOSH, it is soooooo good!”. And Alice said, “I loooove it!” She wants it for breakfast next week. I get so excited when I make something everyone likes so much, can you tell?

And I guess Tate felt pretty strong after his bowl of soup because he proceeded to grab a yoga mat, blare some “Roar” by Katy Perry (big sister influence, I guess), toss his shirt aside, and start planking, doing jumping jacks, push ups, and then ended with some burpees. Goes to show, I guess they do watch and learn by the example, even when we don’t realize it. It made me smile. Thankfully, this was a good example he learned from me. Well, all but the tossing of the shirt. Not sure who he learned that from…

Tomorrow is the first day of fall and makes me so incredibly happy. This is by far my favorite time of year! I want to be outside enjoying the cool air as much as possible, I want to eat comfort foods like beef stroganoff and sweet potato chili, and I want to go on long runs, and enjoy a warm breakfast (paleo treats) afterwards.  I’ve been wanting to make some carrot cake lately but my son requested waffles this morning so figured we could compromise.

I added some coconut butter, which is highly addictive by the way, but my husband said he actually just prefered it with just regular butter and lots of maple.. That just leave more coconut butter for me!  Tate LOVED them, but without the walnuts so next time I will make them without. We did have leftovers so he keeps asking for more of his “pumpkin bread”. It does remind me of pumpkin bread, which in my opinion, is a good thing!

Either way, these are pretty darn good! It’s almost like you could taste fall!
 
 
Oh and I almost forgot! Y’all come see me next weekend (Sept 27th and 28th) at Dr. Bhatia’s office at ACHIM for the Kids Nutritional Event, if you can find time between soccer, football, and lacrosse games! Carrot Cake Waffles

Serves: 2-4
 
Ingredients
  • ⅔ almond flour
  • 3 tbsp coconut flour
  • 4 tbsp grass fed butter, melted
  • 4 tbsp maple syrup
  • 3 eggs
  • ¼ tsp celtic salt
  • ¾ tsp baking soda
  • 1 tbsp cinnamon
  • 1¼ tsp ginger
  • 1¼ tsp nutmeg
  • ⅓ cup coconut milk
  • 1 cup shredded carrots
  • chopped walnuts and raisins or currants, as desired
Instructions
  1. In a blender, finely chop your carrots.
  2. In a small bowl, mix wet ingredient together.
  3. In a medium bowl, mix dry ingredients together.
  4. Combine the wet and dry ingredients together in the medium bowl and mix until blended well.
  5. Fold in raisins/walnuts.
  6. Pour in a waffle iron and cook about 3-4 minutes or until finished. Don't lift the waffle iron too soon as it will stick. Mine is a non-stick so I just poured in the batter as is but if yours isn't you may want to spray some coconut oil to cover the top and botton grill of the waffle maker.
  7. Drizzle some maple syrup and enjoy the waffles with a side of bacon or sausage or some other yummy, salty protein!
