Since grilling and the 4th of July go hand in hand, and here in Atlanta, peaches are a big part of the 4th as well, we wanted to make some grilled peaches last night. Actually, we just love peaches at our house, so between adding them to popsicles, smoothies and of course just eating them by the dozen, we thought grilling would be another fun way to enjoy them.
What makes them extra yummy is the coconut milk/cream. If you are going to use the coconut whipped cream, I highly recommend getting the full fat coconut milk and putting it in the fridge the day before so it’s nice and cold.
Okay, here is what else you’re going to need:
- peaches
- ghee (or butter)
- cinammon
- raw dark honey (optional)
For the cream:
- coconut milk
- vanilla
- stevia (if you don’t use honey)
The kid loves cinnamon…
Then grill them on medium heat for 3-4 minutes on each side and you’re done!
While they are cooling, make your coconut whipped cream by following these directions. I didn’t have the full fat coconut milk on hand so I just whipped up (with my hand blender) a half can of Trader Joe’s cold coconut milk and added in 3/4 tsp of pure vanilla and about 10 drops of stevia. To make it a little bit colder, I added some ice cubes after and let it sit for about 10 minutes. Then I added it to the peaches and it was worth the wait!! They were delicious! Honestly, while the kids liked the grilled peaches, I think it might be more of an acquired taste for them. But Scott and I sure loved them!!!
