It’s so HOT out!

Ahh, we had such a mild summer, until the past two weeks and now it’s crazy hot in Atlanta. Uggh, I’m loving summer time with my kiddos but am ready for some cool weather relief. And while there’s nothing we can do other than hit the pool as much as possible, we thought some fun popsicles could help!  It’s been neat experimenting with a few different ones to see what we like the best since the possibilities are truly endless.  So in the past week or so, we’ve made chocolate nut butter pops, peach watermelon pops, and then strawberry creamsicles.   YUM! They were all so good and all refreshing!  I think the peach watermelon was my favorite, Alice loved the strawberry one, and of course, Tate loved all three!

This is what you need for the chocolate nut butter popscile.

  • 1/2 can oconut milk
  • 1/4 cup peanut or almond butter or Justin’s nut butter
  • stevia, 10 drops
  • honey, 1 tbsp
  • dark chocolate chips, handful
  • bananas (optional)

Blend well with hand mixer, pour into the popsicle holders, and let freeze for about 4 hours.

Tate’s focus in the middle picture cracked me up.  Hard to tell what he’s thinking, right? Yeah, right.

I know, a lot of Tate in his skibbies lately, but this was his first year on the swim team and he was so proud…I think mainly of the uniform.   And hey, who doesn’t love a good speedo? Apparently the boys in my family are big fans (re 4th of July post)…

For the peach watermelon popsciles, you need:

  • 2 tbsp coconut milk
  • 10 drops stevia
  • 3-4 peaches, cut up
  • 1 cup watermelon, cut up
Blend with that hand mixer, pour and freeze.

And lastly, for the strawberry creamsicle, this is what we used:

  • handful of strawberries (about 10)
  • some coconut milk (about half a can)
  • 1 tbsp honey
  • juice from 1 lime (optional)
And again, just blend with that hand mixer, pour and freeze.

My sweet niece was definitely a fan of these beach treats…

    • landriav - Hey Colleen! I would maybe try a liquid sweetner like honey? Otherwise, try using about 1/8 tsp. I think it should mix well. I hope it works! Good luck!! 🙂ReplyCancel

    • landriav - So…how did they turn out?? Good I hope! 🙂 Yesterday, we had leftover raspberry smoothie (recipe here: and stuck one extra in the freezer with a metal spoon. Tate is now eating it like a popsicle and it is REALLY good!!! Taste like King of Pops, but better!! You’ll have to try that one next time!ReplyCancel
