Chicken Soup for the Soul…

When grandma use to say you needed a nice warm bowl of chicken soup to get well, I don’ t think she was talking about MSG, gluten, hydrogenated oil, GMO laden canned Chicken Noodle Soup.  I think what she was referring to was soup with immune-boosting bone broth, nourishing fresh herbs and spices, and some healthy chicken. For someone that is ill or recovering from surgery, I can’t think of a more perfect meal. Not only does it just taste soothing, but the broth is full of so many nutrients as I’ve said before (see old post here).

Anyway I’ve had some sick buddies lately, and they said this has been a great go-to meal for them. One friend who I made this for is an amazingly strong and brave woman. She has been doing everything in her power to prepare her body for some major surgery by taking probiotics, eating lots of greens and protein, and so much more. I have no doubt she will have an speedy recovery. Anyway, hopefully this soup will also help the mending process.

Oh, and not only is this soup incredibly healthy, but also it really does taste AMAZING. I am already planning on making some more for my family next week!

Here is what you need for THE BEST Chicken noodless soup:

  • whole chicken (or organic rotisserie)
  • bone broth (or organic chicken broth)
  • 1 pack broccoli slaw
  • handful of shredded carrots
  • 1-2 stalks of celery, if desired
  • 1 medium onion (I use TJ’s precut onion shallot garlic pack)
  • 4 fresh garlic cloves, minced
  • 2 bay leaf
  • 1/3 cup fresh parsley, chopped
  • 2 tsp celtic salt (or more, depending on preference and if you add more water)
  • 1 1/2 tsp pepper
  • 3/4 tsp thyme
  • 4-6 cups water
  • 1 tbsp Bragg’s apple cider vinegar
  • 2 tbsp grass fed butter or ghee

I love the easy to use pre-cut organic Broccoli Slaw from Trader Joes. Also I get most of my chicken from Costco now since they offer organic whole chickens and breasts…

I started by putting the whole chicken in the crock pot, and then added some salt and pepper as a rub to the chicken, and then let it cook on low for about 4-5 hours.

Once it was done, I took the meat off the bones, wrapped up the chicken and put it in the fridge for the next day.

Look at how much meat there is from one whole chicken? That’s more meat than I ever got from a rotisserie chicken!

For the bones, I left them in the cooker, added some water until it just about covers the bones, squished the bones down flat so it would all be immersed, and added 1 tbsp apple cider vinegar.  Then, I turned the slow cooker down to the “warm” setting, put the lid back on and let that cook over night. In the morning, I turned it off and let it sit for a few hours so it would be easier to transfer and I didn’t burn myself but you could do it immediately, I also just didn’t have the time.

I borrowed a friends strainer and it made this process so amazingly simple….

Now get out your big dutch oven or pot and melt some butter. Add your fresh minced garlic, the bag of  broccoli slaw, some extra shredded carrots, some chopped celery (I forgot to add it), and your chopped onion or your TJ’s onion mixture and let it cook until the veggies start to get soft. Next add in your broth, some water (start with 4 cups and add more as needed), your chicken and spices and allow it to cook on low for about 2o minutes so the flavors soak in well.

Yes it takes two days, IF you use the homemade bone broth, but it really is easy to do and soooo worth it. This is THE BEST chicken soup, if I do say so myself.

Tate actually said, “I thought it was going to be gross but, OH GOSH, it is soooooo good!”. And Alice said, “I loooove it!” She wants it for breakfast next week. I get so excited when I make something everyone likes so much, can you tell?

And I guess Tate felt pretty strong after his bowl of soup because he proceeded to grab a yoga mat, blare some “Roar” by Katy Perry (big sister influence, I guess), toss his shirt aside, and start planking, doing jumping jacks, push ups, and then ended with some burpees. Goes to show, I guess they do watch and learn by the example, even when we don’t realize it. It made me smile. Thankfully, this was a good example he learned from me. Well, all but the tossing of the shirt. Not sure who he learned that from…

  • Nikki - Sounds delicious. Ending day 1 prep, and my Trader Joe’s doesn’t have the broccoli slaw. Any idea for easy and equally healthy substitutes? I’ve got their chopped Brussels sprouts but afraid the flavor will be too strong.ReplyCancel

    • landriav - Hey Nikki! Publix does carry Broccoli Slaw also so maybe check there. You could also use a lot of shredded carrots, celery and onion. I hope you like it!! Oh, zuchinni noodles (or even grated or thinly chopoped) would work well too. I agree and think the Brusssel sprouts might be a little strong.ReplyCancel
