Curry Lime Chicken…

We went to our friend’s house for dinner the other night and had this fabulous Chicken Lime Curry dish, so of course, I had to get the recipe and make it  for dinner this week.  Everyone ate all of it,  but without much comment. I wasn’t sure if they liked it because I  know curry can be a pretty strong spice.  So after everyone was done, I asked the kids what they thought and Alice came back with “I loved it!!” and Tate said “Mmm. Uh hmm. Yeah, mom it was good.”  So enthusiastic, right?  But he really did like it because he ate every single bite!  Anyway, I loved it and it went really well with my butternut squash soup for lunch the next day.

By the way, a grater should not be used in place of a a zester.  Out of a whole lime, I only got about 1/10 of a tsp of lime zest!  Time to invest in a real zester…

Okay. here’s what you need for the chicken dish:

  • 1 1/2 lb chicken breast, cut into bite sized pieces
  • 1 1/2 lime, juice
  • 1/4 tsp lime zest
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp celtic sea salt
  • 1/4 tsp pepper
  • 1 1/2 tsp curry powder
  • 1/2 tsp coriander
  • 2 tsp cilantro, fresh or dried
  • 2 tbsp coconut palm sugar

Here’s what you need to do:

1.  Preheat oven to 350.

2.  Cut up chicken into bite sized pieces.

3.  Place chicken in a square glass dish and set aside.

4.  Combine above ingredients in a separate bowl, mix, and add to the chicken.

5.  Bake for 30 min, stirring around every 10 minutes or so.

  • Elizabet - That’s awesome! Now and then, my Mum makes sotehming like this, but when she serves it, she gets this big pan and flips the pot on it to make it into a cool shape (You know, like what you do with custard soemtimes). Anyways We would have this game when we eat, and we would all put our own rice, but the first one to make the rice get out of it’s original shape has to clean the dishes that night lol. Whoever reads this should definatley try it. Remember, don’t knock till you try it. =]ReplyCancel

    I think she means one and a half lime, juiced… Or around 3 tablespoons.

  • Cynthia - Had this tonight with garlic green beans and it was a hit. Kids said not as good as coconut chicken nuggets but it was their next favorite. I loved it also! Simple and delicious. Thanks for all your recipes.ReplyCancel
