So it isn’t paleo, but it is still a HECK of a lot better for you than the traditional cookie dough. If you like cookie dough, then you’ll like this. Scott still wanted me to bake it, so maybe it’s a girl thing, but I don’t think he really got the whole just eating cookie dough concept. I thought everyone loved cookie dough! Anyway, I had never made a dessert before out of beans, avocado, yes, but beans no.

Anyway, this was inspired from a blog called Chocolate Covered Katie. She has some interesting and fun ideas. I can’t wait to try more of them for the kiddos!

Here’s what you need:

  • 1 can chickpeas (15 oz, drained)
  • 1/8 tsp salt
  • 1/8 tsp baking soda
  • 2 tsp pure vanilla extract
  • 3 tbsp nut butter (If you use peanut butter, you can taste it a little, so if you don’t want this, just sub for palm shortening or coconut or olive oil.)
  • 1/4 cup coconut milk
  • 2/3 cup raw coconut palm sugar
  • 1/2 cup dark chocolate chips
  • 3 tbsp flax meal

Add all ingredients (except for chocolate chips) to a food processor, and blend until very smooth. Stir in the chocolate chips and enjoy!

While I was cooking last night, Tate kept asking me if the kale I was cooking was “money”.  Oh Tate, in many ways it’s even better.  Before I share with you my new recipe, I wanted to show you something else first.

So, a friend of Scott’s sent this video to him the other day of Terry Wahls’. She has MS but using food as her medicine, she has had a miraculous recovery. To be honest, I had seen it before, but seeing it again reminded me of just how amazing and powerful foods are, especially to someone with an autoimmune disease, diabetes, etc.  It’s 17 minutes but completely worth watching for anyone and everyone. I know it sounds a little long, but today I watched the first few on my iPhone, and then listened to the last 15 while I was cleaning the dishes.  Click on the link from my blog, or copy and past and email it to yourself (as a reminder) and then listen to it while on a walk, in the car, whenever.  While a little nerdy, and some parts a little technical, I hope you’ll find it as interesting as I did.

So on that note, I made a fantastic new side with kale. I loved it so much, I made some last night with dinner, and then, when we ran out, I got up and made some more halfway though dinner. If you like traditional collards, you’ll love this, and it cooks in about 1/50th of the time!  By the way, the first time I made it was with collards on New Year’s Day, hence Tate asking if it was “money”.  I couldn’t figure out what he was talking about when I was cooking this.  I thought wow, this kid really is getting it! Ha! What do I know!?

Anyway, here is what you need:

  • kale, 3 big handfuls (because it was all that fit in the pot)
  • bacon, 2 slices chopped
  • apple cider vinegar, 1 tbsp
  • stevia, just use 2-3 drops
  • celtic sea salt, 1/4 tsp

Chop up the bacon and cook in pot until brown. Then, add in the kale and cook until the leaves lighten and are softer probably 5 or so minutes. Lastly, add in the apple cider vinegar, salt and stevia and enjoy!

  • Esther - I made up a similar dish using raw shredded beets along with their thinly sliced tops and also have used swiss chard the same way. The only difference is I used 3 times the amount of bacon and added half of a good sized onion thinly sliced. I used about a tablespoon of water to help the mix cook faster while stir-frying and then when all was crisp-tender I added about one tablespoon of lemon juice just before serving. The size of the pot I used was a dutch oven and the amount of sliced greens would fill the pot about 3/4 full when first added to the pot – just to give you an idea of the amount mine would make. You can adjust it down for a smaller side.ReplyCancel

This use to be one of our weekly staples, maybe a little too much, so we took a break, but this was always a hit with everyone so thought I would try it again today. And after tasting it just now, I’m not sure why we took such a long break. This is so yummy, and of course, so easy!

Here’s what you need:
  • 1-2 lbs chicken breast, cut into chunks (great leftover!)
  • 1-2 jar(s) of Trader Joe’s Salsa Verde (1 jar per pound of chicken)
  • sweet peppers
  • coconut oil
I love that you can buy precut tri sweet pepper mix from Trader Joe’s or Publix. I just don’t need 3 large peppers. Plus, this was saves time of course, and some money since I’m just buying what I will use.
Here’s how to make it:
1. Put 1 tbsp coconut oil in a pan and heat. Add peppers and cook until brown. Set aside
2. Put 1-2 tbsp coconut in a pan and heat. Cook chicken until brown.
3. Then, add peppers back in the pan, along with TJs Salsa Verde, and simmer about 25 min or until chicken is done. If 1 lb chicken, then use 1 jar salsa and if 2 lbs, then 2 jars.
Garnish with avocado, cilantro, tomatoes. You could also pour on top of cauliflower rice. Yum! Enjoy!

Welcome back into our family salsa verde. We’ve missed you! By the way, this salsa is great for chicken, white fish, crockpot dishes, in salads, you name it. It’s great stuff!

He heard “Chicken Verde” and was like “I got it, move over”. And i started getting stressed out because he was not following the directions you put up. HA! Buying that big green egg for my husband really was THE best give I ever got him. Who knew years ago he (or me for that matter!) would love to cook! Anyway, Scott said this weekend for dinner that he’s “got this.”. Okay! And I have to say, I wish you could smell the marinade he made. It was incredible!!!

Here’s what he used:

  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 3-4 garlic cloves
  • 2 tbsp fresh oregano leaves (can use 2 teaspoons dried oregano instead)
  • 1/2 cup olive oil
  • 2 tbsp white wine vinegar
  • 1 teaspoon celtic sea salt
  • 1/4 teaspoon black pepper

Here’s what he did:

1. Finely chop the parsley, cilantro, oregano, and garlic. Place in a small bowl.

2. Stir in the olive oil, vinegar, salt and pepper. Adjust seasonings. Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep for a day or two.)

3. Once the mixture was ready, he poured half of it in bag and let it marinate with some tri tip (sirloin, flank, skirt, etc) for about 4 hours. It’s great with any meat! Then of course, he grilled it to perfection. Good “smokey flavor”, as usual. 🙂 If you have an egg, you know that word well.

4. Then, we just used other half to top on meat and it was amazing. I actually will use this for next time on top of my salmon. It would be good as a topper on any meat or veggie really. The kids will eat it by the spoonful!!

It’s ready to marinate! You can just tell it’s going to be good by the look on his face, can’t you?

So my hubby and I went out last night for our anniversary dinner last weekend and I had the most amazing desert I think I’ve ever had. Okay, it was the only desert I’ve had out in many years so that was a treat in itself, but wow, this was a-maaazing. And no, it’s not Whole 30 approved, but when the waitress come and told us what was in it, and being that it was a special occassion, I just couldn’t turn it down.  Believe me, you wouldn’t have either! Needless to say, I couldnt wait to try to recreate it!
 
What is so fun and awesome about this was the main ingredient (don’t judge before you try it) ! Any guesses? Don’t peek. I’ll give you a hint…it’s a vegetable. You peeked, didn’t you? Can you believe it? Avocados!! It was better than any other chocolate pudding, mouse etc. that I’ve ever had!  On top of it being healthy, the recipes has so few ingredients, and it is also the easiest dessert I’ve ever made! I told you I get excited when I find new things that I love! So fun! And, my in-laws, whom I’m very proud of by the way, (have been eating healthy lately and are feeling great, sleeping well and also loosing a good amount of weight (bonus!)), came over for dinner and they ate it as well. My mother-in-law, who is a serious chocolate connosour, said it was “really good!” and my father in law said it was “FANTASTIC, really fantastic!!!”. Woo hoo!
 
Here’s what you need:
 
  • 2 ripe avocados
  • 1/2 cup cocoa powder  (i didnt use cacao because i wasn’t sure it would blend together)
  • 1/2 cup maple
  • 1/2 cup full fat coconut milk 
  • 1 tsp vanilla extract
  • 1/4 tsp salt
Mix all of the ingredients together with a hand blender until smooth, scoop into ramakins and enjoy immediately or put in the fridge for a bit to get it cooler and enjoy! Yep, that’s it!
By the way, I would either pour a little coconut milk on your treat or dip each scoup into a little milk. It REALLY balances it out nicely and the whole family agreed it was even better with the coconut milk!

  • Kim - Just made this pudding. I made a couple of changes based on what I had in the kitchen. I used unsweetened almond milk (no added sweeteners in it), and I did use 100% cacao powder which blended beautifully. Extremely smooth. I used 3 avocados because mine were kind of small. And I used 1/4 cup agave nectar and 1/4 cup raw, unfiltered honey. I made it in my Vitamix…..fast and easy! My 16 year old son LOVES it. He was shocked to know it has avocados in it. Very exciting new dessert!!! Thanks!ReplyCancel

We also use to like Yeah Burger, same part of town, but last time it wasn’t as good and the service wasn’t great. But love that they have bison and grass fed beef, gluten free sweet potato fries (you have to ask for no sugar), and gf beer (bards!). Honestly, we dont eat out that much and typically the places we go are pretty kid friendly. I actually love the chicken rice soup (without the rice) at La Parilla. I always add guac to my soup, get a large and make it a meal. But the nice thing about eating this way, you can always get a meat and steamed or sauteed veggies somewhere! Good question.
