Superbowl Spinach Dip

I am soooooo happy. For years I’ve wanted a Vitamix and today I got one for my anniversary/Valentine’s Day! Woo-hoo!!! I’m just not sure where to start with this lovely machine.

So, late this afternoon, Tate and I ended up making 2 different types of smoothies and a spinach dip. It took most of the afternoon to figure out what to make and how to work the Vitamix, so guess what we had for dinner? Yep, 2 smoothies and spinach dip. Sometimes there is just not enough time in the day.

Anyway, I would LOVE to hear about your favorite smoothies, soups, etc. I have so much to learn! Please share with me!!

Why in the world do they still have the Super Bowl on a Sunday?  It would be so much easier, and certainly so much more fun, if they would change it to a Sat night, instead on a school/work night.  Oh well. It is what it is I guess.

Well, in order to get in the Super Bowl frame of mind (still bummed the Falcons won’t be there!) we thought we’d make a spinach dip.  I haven’t had spinach dip in years and thought this turned out well, especially without using MSG-filled Knorr’s Vegetable Dip, sour cream and Kraft mayo (that’s how I use to make it).  This recipe is paleo sans the dairy (so it’s “primal”) but if you don’t or can’t do dairy, just use nutritional yeast in it’s place.

Anyway, this was a pretty good dinner and I think it will be an even better Super Bowl appetizer…

Here is what you need:

  • 2 bags or 10 oz. box of frozen chopped spinach
  • 1/2 cup cashews 
  • 2 tbls EVOO 
  • 1/2 cup parmesan cheese (I ended up using TJ’s with raw cow’s milk and no rBGH) OR nutrtitional yeast
  • 2 tsp salt
  • 2 tbsp garlic powder
  • 2 tsp onion
  • 1/2 lemon, juiced
  • artichoke hearts (optional) 
I honestly forgot to use the artichoke hearts to my dip,  so if you use them, you might need to add a little extra spice salt, and onion & garlic powder. Just be sure to adjust according to taste.

Because I was playing with my Vitamix, but honestly, you could just mix it all together in a bowl. ..

Start by preheating your oven to 350. Then, thaw your spinach, if it’s frozen, and strain.  Then, blend up your cashews to make a cashew flour consistency. I usually keep a container of some in my refrigerator since I use the it so often on our kale chips.

Now, add all the ingredients together in a medium sized bowl, stir well and pour in a glass dish. Add some extra parmesan on top if you’d like, cook for 10 minutes, and enjoy warm!

landriav - Hey there Mandira! Sorry for my late response but just saw this and didn’t get a notification. Anyway, yes, you could use sunflower seeds as they make a good “flour” too. Or, if you are okay with not cooking it, a avocado would add great creaminess to it! Hope this helps and thanks for your note!

landriav - I haven’t even really thought of using it as a food processor. Great idea! I’ve just been so excited to make fun smoothies with lots of greens for me and my family, I haven’t thought much beyond that. Excited to play with it more, but yes, I am already SO in love with this thing!! Thanks for your comment Britton! Great to hear from you.

landriav - Marla-Dean, I am sooo in love with this thing! I’ve been using it at least 2-3 times a day so far. We are having fun experimenting over here and are finally figuring out what we love. I just can’t believe I waited so long to get one!!

Marla-Deen - I, too, am so in LOVE with my Vitamixer!! It is truly the best and we use it DAILY!!

landriav - Ha! Good to know Susan about Cooks! I got mine at Costco! Can’t be their price!!

Susan - Jealous! I tried buying one at Cook’s Warehouse in Jan but they were out of the model I wanted. I’ll be eager to learn of any recipes. Cook’s Warehouse also offers a Vitamix class ($25 or free if you buy yours from them) to each you the Vitamix basics.

Mandira - Landria – this looks great! Any suggestions for an alternative to cashews? Rohan is allergic to nuts. Just leave them out or substitute something else?

BTW, we made the cauliflower soup a couple weeks ago and loved it!

Britton McLeod - Hi Landria, I LOVE my vitamix and now use it for everything it seems. It’s replaced my food processor! I don’t have any particular recipes to share. But I basically use it for all my prep work like chopping etc, make salad dressings,smoothies and shredding chicken. You will fall really get a lot of enjoyment out of this machine:)

For our morning smoothies i stole most of my ideas from the juice bar at Whole Foods on Ponce. But the favorites include: 1. Apple/Banana/Lemon/Ginger/Date/Kale 2. Strawberries/Blueberries/
Raspberries/Dates/Kale and 3. Pineapple/Grapes/Banana/Avocado/
Broccoli/Kale. I also like the Beet/Carrot/Apple/Lime/Ginger/
Spinach but Melanie is not a fan so i only do that when its just me.
